Skidmore Spotlight: Joe Greco
Joe Greco, who works as a production manager in Dining Services, oversees food production and creates menus and recipes for Skidmore’s dining hall and catering services.
Skidmore’s extraordinary dining program drew the trained chef to this job three years ago. “The opportunity to be part of a highly regarded campus dining program was something I was looking to be part of for a long time,” he says.
In his role, he enjoys having the freedom to be creative with the menu and working with a dedicated group of colleagues. “We all work hard but know how to have fun on the job and keep the atmosphere positive,” Greco says.
His favorite campus tradition is the American Culinary Federation conference and competition, which Skidmore hosts — and competes in — each January. “We are so lucky to be able to spend time with the other college teams that attend — learning, eating and competing,” he says. “We look forward to it every year, and it rejuvenates us for the year ahead.”
Greco and his teammates recently brought home the gold medal for the sixth consecutive year. Afterward, NewsChannel 13 invited Greco to demonstrate how to make one of the competition recipes .
When he’s not whipping up winning dishes in competition or D-Hall, Greco enjoys cooking at home and fishing.
